With only 10 - 12 seats per service, Matsu offers one of the most exclusive dining experiences in Australia. Here, chef-owner Hansol Lee — a Kenzan-trained master of his craft — prepares and presents each course personally, guiding guests through a seasonally evolving tasting menu that blends precision, elegance, and deep-rooted Japanese tradition.

Each sitting is a carefully choreographed experience. Guests are served an ever-changing multi-course feast of artfully plated dishes such as Tasmanian oysters with caviar, silky chawanmushi, and exquisite nigiri sushi — all paired optionally with premium sake curated to elevate the meal.
